Ingredients: 4 large 12" flour tortillas; 4 Tostadas (or corn tortillas & oil for frying); 2-3 roma tomatoes (diced); Vegan sour cream; 2 cups shredded lettuce; 1/4 cup chopped cilantro; Juice of 1/2 a lime; 1 pound vegan ground beef*; 3-4 Tbsp taco seasoning**; Juice of 1/2 - 1 lime; 1/2 - 1 cup water; Salt & pepper to taste; 1/2 cup raw cashews; 1 cup unsweetened plant milk; 1/4 tsp onion powder; 1/4 tsp garlic powder; 2-3 Tbsp pickled jalapeño brine; 8 oz. vegan cheddar cheese (shredded); Salt & pepper to taste
